Natural fermentation in the bottle with sedimentAfter the first fermentation, the product is left to rest in steel containers. In February, it is bottled with selected yeasts for fermentation. Fundamental is the period of bottling, which takes place in a specific astral phase of the moon. The wine will be ready towards the end of the next harvest, in September / October and will present about 2.5 atmospheres and storage compacted in the bottom of the bottle. Wine is particularly suitable for cured meats, one of these: "Re Culatello".
